Tofu Stir Fry
There are so many amazing recipes out there that involve Tofu and with the cost of Tofu being so reasonable I knew I just had to give a go! In my house I like to ensure my husband and I try and have one meatless meal a week so this for me is the perfect recipe for that day! I can promise you also that the heat up for lunch the next day is just as amazing!

Serves 4
Ingredients:
1 Red Onion, Cubed
1 Green Pepper, sliced
1 Banana Pepper, sliced
4 heads of Baby Bok Choy, Chopped
1 package of White Mushrooms, Sliced
1 package of Medium - Firm Tofu, cubed
1 cup of cooked rice
2 tablespoons Soya Sauce
1 Teaspoon Red pepper flakes
1 Teaspoon of Rice Wine Vinegar
1 Tablespoon hot sauce
Directions:
Heat the rice Vinegar over med-high heat into a large wok, add the tofu and saute for 3-4 mins. After 2 mins add 1 tablespoon of soya sauce, red pepper flakes and hot sauce. Add all remaining ingredients except Bok Choy, Rice and remaining tablespoon of Soya Sauce. Saute all ingredients for 10 mins. Add Bok Choy and remaining Soya Sauce and let simmer for 3 mins stirring every min. Serve over Rice.
