Pad Thai

I found this recipe for Pad Thai on pinterest and it is amazing! I always wanted to know how to make Pad Thai and this site made it sound so easy so I thought I would give it a try. I did change up a few things such as spices and I added Tofu to make this a bit more filling but in all seriousness, if you are a pad thai fan you must must give this one a try! Ingredients:

- half a package of rice noodles

- one bunch of cilantro, chopped

- on bunch of roasted, salted peanuts, chopped

- a bunch of green onions, diced *ensure you separate the white and green parts of the onion

- 1 container of med firm tofu, cubed

- 2 tablespoons of brown sugar

- 3 tablespoons of Soya Sauce

- 2 tablespoons of lime juice

- 2 tablespoon of olive oil

- 1 teaspoon of minced garlic

- 2 eggs, beaten

- 1 jalapeno, diced

- 1 tablespoon of Sriracha

 

Directions:

Soak rice noodles in hot tap water for 25-30 mins, drain and set aside.

While rice noodles are soaking mix together brown sugar, soya sauce, lime juice and sriracha until brown sugar is dissolved. Set aside.

In a med skillet, heat one tablespoon of oil under medium heat and add tofu, toss and cook in skillet for 10-12 mins. Set aside.

Heat remaining olive oil in the skillet under med-high heat, add garlic and white green onions and toss for about 1 minute. Add eggs and cook unil eggs are set. Set aside on clean plate.

In skillet add rice noodles, remaining green onions, jalapeno and soya sauce mixture. Toss until noodles are softened, about 1-2 minutes. Add tofu and egg mixture and continue to toss for 1 additional minute, breaking the egg mixture along the way.

Serve and top with cilantro and peanuts.
