Frittata
My husband is a little intense when it comes to eating right and that means every day he has to start it right! This recipe for his Frittata is great and filling. Just cook it up on a Sunday evening and you have breakfast for 3-4 week days ready and waiting!

Ingredients
- 6 eggs
- 2 peppers, diced
- 1 onion, diced
- mushrooms
- 1/4 cup Spinach, chopped
- 1/4 cup feta
- 1/4 cup mozzaella
- 1 cup milk
- Parm to taste
- 1/2 Tablespoon of basil
- 1 Tablespoon minced garlic
- Salt and Pepper
Directions:
- Preheat oven 375F/185C
- Sautee veggies until tender and place in baking dish
- Place both mozzaella and Feta on top of veggies
- In a bowl whisk together eggs, milk, garlic, basil, salt and pepper
- Pour egg mixture over top of cheese/veggies
- Sprinkle with Parm cheese
- Bake 45 mins uncovered
- Cool 10 mins
